A perfect house-owner will welcome you at Baccano: Fabio Casamassima, a man who managed to alter his life to follow his greatest passion: wine. Head sommelier and Manager of Enoteca Ferrara, Fabio has refined and enlarged his knowledge and ability to taste thanks to the time spent with the big names of the wine sector: Paolo Poli, Carlo Ferrini and Daniele Cernilli among the others. He managed a bathing establishment with a quality restaurant in Argentario, Tuscany, and coordinated professional courses for restaurant managers on behalf of Casale del Giglio. He has joined Baccano to share his experienc and ensure the best service to the client. He has designed a challenging wine list for Baccano, proposing to Roman and International customers his own philosophy of wine: a selection of top quality wine labels at very affordable prices. Over 200 labels, with a particular attention to organic wines and small winemakers. A strong Italian selection with many local excellences: great wines and champagne affordable for all!

Food Experience

The large open plan kitchen overlooking the restaurant is Baccano’s very heart. Simplicity is the main ingredient of our recipes: from breakfast to lunch, from the happy hour to dinner, our proposals are light, simple and inspired by tradition. Experience is combined with the knowledge and respect for raw materials, that must always be of top quality. Italian and French cheeses, fine cold meats, home-made or great artisanal pasta, premium meat and seasonal vegetables and a wide selection of extra-virgin olive oils.
